Cheesy Chicken Bake


Chicken, black bean, corn, cheese and rice makes up this yummy, easy to make, healthy dish!

I have about 130+ recipes pinned under my Favorite Recipes board on Pinterest and I FINALLY tried one that wasn't sugary.

Quick Background Fact for You --- My boyfriend, Slade, doesn't live with me, but he is at my house every day for almost every meal, so when I cook, I definitely am trying to cook for the both of us. 

I saw this recipe on Pinterest a month or two ago and constantly thought about making it. I called my mom for some help with it, being I'm a beginner cook. I made a few subtractions and substitutions for this recipe, but it was still delicious! It lasted my bf and I 3 meal sittings. (we devour big serving sizes for each meal, so it may last you longer!)
Here's the recipe! I'll put the original things next to what I used.



2 Whole, Skinless Chicken Breasts
1 box Spanish Rice (about 4 cups cooked) [original: brown rice]
1 Can Black Beans, rinsed and drained
1 Can Corn, drained --- 15 oz is about 1 Cup
1 Cup Sour Cream [original: plain greek yogurt]
1 Cup Shredded Cheddar Cheese
1/2-3/4 Cup Salsa (choose your favorite!)
[original: 4 ounces, fluid Can Green Chilies & 2 Tablespoons Fresh Cilantro For Garnish]


Preheat oven to 350F.
In a large bowl, combine all ingredients //except for cilantro// and mix thoroughly to combine. Make sure the sour cream and cheese are stirred in throughout the entire bowl. Season with salt and pepper if desired.
Transfer to an oven-safe dish and top with extra cheese if you would like.
Bake for 20-25 minutes, or until heated through. //Garnish with chopped cilantro//

My personal tidbits to add:
I didn't use cilantro or chilies, just because I didn't have any. I used spanish rice instead of brown rice. I had thick chicken breasts, but forgot to pull it out for use before work, so I had to defrost it via microwave, and to keep it from cooking while in there, I cut off chunks as they thawed. I had 6-8 pieces of chicken when I was all done. 
With the chicken being uncooked, I had to bake the entire dish for about 15 minutes longer.
I cooked the rice according to how the box instructed, but I didn't add tomatoes. Using medium salsa, it didn't have a spicy kick, but still tasted delicious.. Plus, I can't handle much spice. = [
I put a bunch of cheddar cheese on the top of it, too! I LOVE CHEESE.

All said and done, Slade and I enjoyed this dish. It's easy, fairly quick, and affordable.
I loved to eat the leftovers; Slade said that it was almost better reheated the next day! I know I will be making this delish-dish much more often!
